Description

These cheesy cauliflower bites are a quick, easy, and healthy snack or appetizer. Made with just three main ingredients, they are low-carb, flavorful, and perfect for dipping.


Ingredients

  • 2 cups cauliflower florets (frozen or fresh)
  • 1 cup cheddar cheese, shredded
  • 1 egg
  • 1/4 tsp oregano (optional)
  • 1/4 tsp garlic powder (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C). Grease a 24-cup mini muffin tin (or a 12-cup standard muffin tin) with oil.
  2. Cook Cauliflower:
    1. Microwave: Place cauliflower in a microwave-safe bowl, cover with plastic wrap, and microwave for 7-8 minutes until tender.
    2. Stovetop: Blanch cauliflower in boiling water for 5 minutes. Drain well.
  3. Rice the Cauliflower: Place steamed cauliflower in a food processor and pulse until it resembles rice. Transfer to a clean dishcloth and squeeze out as much water as possible.
  4. Mix Ingredients: In a large bowl, combine cauliflower, egg, cheddar cheese, and seasonings. Mix well until fully combined.
  5. Fill Muffin Tin: Scoop about 1 tablespoon of the mixture into each muffin cup, pressing down lightly.
  6. Bake: Bake for 12-15 minutes, or until edges are golden brown and centers are firm.
  7. Cool & Serve: Let cool for a few minutes before removing from the muffin tin. Serve warm with your favorite dipping sauce.
