- 2 cups cauliflower florets (frozen or fresh)
- 1 cup cheddar cheese, shredded
- 1 egg
- 1/4 tsp oregano (optional)
- 1/4 tsp garlic powder (optional)

Instructions
- Preheat Oven: Preheat oven to 375°F (190°C). Grease a 24-cup mini muffin tin (or a 12-cup standard muffin tin) with oil.
- Cook Cauliflower:
- Microwave: Place cauliflower in a microwave-safe bowl, cover with plastic wrap, and microwave for 7-8 minutes until tender.
- Stovetop: Blanch cauliflower in boiling water for 5 minutes. Drain well.
- Rice the Cauliflower: Place steamed cauliflower in a food processor and pulse until it resembles rice. Transfer to a clean dishcloth and squeeze out as much water as possible.
- Mix Ingredients: In a large bowl, combine cauliflower, egg, cheddar cheese, and seasonings. Mix well until fully combined.
- Fill Muffin Tin: Scoop about 1 tablespoon of the mixture into each muffin cup, pressing down lightly.
- Bake: Bake for 12-15 minutes, or until edges are golden brown and centers are firm.
- Cool & Serve: Let cool for a few minutes before removing from the muffin tin. Serve warm with your favorite dipping sauce.
