Perfect for brunch, holiday gatherings, or a quick family meal, these sandwiches are easy, flavorful, and absolutely irresistible.

Ingredients

Scale

For the Croissants

  • 1/4 cup unsalted butter, at room temperature
  • 2 tablespoons Dijon mustard
  • 2 green onions, thinly sliced
  • 1 tablespoon honey
  • Kosher salt and freshly ground black pepper, to taste
  • 12 mini croissants, halved horizontally
  • 3/4 pound thinly sliced smoked deli ham
  • 6 slices Swiss cheese, cut diagonally

  • 1 large egg white
  • 2 teaspoons poppy seeds
  • 1 tablespoon water

Instructions

  2. Preheat your oven to 375°F (190°C).
  3. Lightly grease a 9×13-inch baking dish with oil or nonstick spray.
  4. 2. Make the Butter Spread
  5. In a small bowl, mix together butter, Dijon mustard, green onions, and honey.
  6. Season with salt and pepper to taste.
  7. 3. Assemble the Croissants
  8. Spread the butter mixture on the cut sides of each croissant.

  11. 4. Prepare the Egg Wash
  12. In a small bowl, whisk together egg white and water.
  13. Brush the tops of the croissants with the egg wash and sprinkle with poppy seeds.

  16. Let them rest for 5 minutes, then serve warm and melty!

Notes

  • Make-Ahead Option: Assemble the croissants a day ahead, cover, and store in the refrigerator until ready to bake.
  • Cheese Swap: Substitute Swiss cheese with cheddar, provolone, or Gruyère for a different flavor profile.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 300°F for 10 minutes.

  • Serving Suggestion: Pair these croissants with tomato soup, a fresh salad, or fruit for a balanced meal.
