Description

This Cajun Seafood Pot Pie is the ultimate comfort food with a Southern twist! Packed with shrimp, scallops, and crab meat, this creamy seafood filling is infused with bold Cajun spices and baked under a golden, flaky pie crust. The rich, flavorful sauce combines seafood stock, heavy cream, and buttery roux, creating a mouthwatering dish that’s perfect for a cozy dinner.

For the Seafood Filling

  • 1 lb shrimp, peeled and deveined
  • 1/2 lb scallops
  • 1/2 lb crab meat
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup diced onion

For the Sauce

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups seafood stock (or chicken broth)
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Crust

 

  • 1 refrigerated pie crust (store-bought or homemade)

Instructions

  1. 1. Cook the Vegetables
  2. In a large skillet over medium heat, melt the butter.
  3. Add the onion, celery, and carrots and cook for 5 minutes, stirring occasionally, until softened.
  4. 2. Make the Roux & Sauce
  5. Stir in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  6. Gradually whisk in the seafood stock, making sure there are no lumps. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
  7. Stir in the heavy cream, Cajun seasoning, garlic powder, onion powder, paprika, salt, and black pepper.
  8. 3. Add the Seafood & Veggies
  9. Add the shrimp, scallops, crab meat, frozen corn, and peas to the skillet.
  10. Cook for 5-7 minutes, stirring occasionally, until the seafood is just cooked through. Remove from heat.
  11. 4. Assemble the Pot Pie
  12. Preheat oven to 375°F (190°C).
  13. Pour the seafood mixture into a 9-inch pie dish.
  14. Place the pie crust over the filling, trimming any excess crust. Crimp the edges to seal and cut a few slits in the crust to allow steam to escape.
  15. 5. Bake to Perfection
  16. Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  17. Let cool for a few minutes before serving.

Notes

  • Seafood Substitutions: Swap scallops for more shrimp or white fish like cod.
  • Make it Spicier: Add red pepper flakes or extra Cajun seasoning.
  • No Pie Crust? Use puff pastry or biscuits instead!
