  • Salt and pepper (to taste)
  • 1.5 tablespoons frying oil or clarified butter
  • 4 cups (600g) chopped cooked potatoes
  • 2 oz (60g) ham, chopped into cubes
  • 1 cup shredded cheese (cheddar & Gruyere mix recommended)

For Serving

  • Sour cream
  • Chives

Instructions

  1. 1. Whisk the Eggs
  2. In a medium bowl, whisk together the eggs, heavy cream, and Old Bay seasoning.
  3. Season with salt and pepper, then set aside.
  4. 2. Cook the Potatoes
  5. Heat oil or clarified butter in a large frying pan over medium-high heat.
  6. Add the chopped cooked potatoes and sauté until they become golden brown and crispy on all sides.
  7. 3. Add the Ham and Eggs
  8. Reduce heat to low and add the chopped ham and whisked egg mixture.
  9. Cook briefly, stirring gently, until the eggs are partially set (they should still be slightly runny).
  10. 4. Melt the Cheese
  11. Sprinkle the shredded cheese evenly over the eggs and potatoes.
  12. Cover the pan with a lid and cook over low heat until the cheese is melted and the eggs are fully set.
