  • 2 lbs potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch dressing mix
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 cup chopped green onions, for garnish

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C).

  2. Cook the Sausage: In a large skillet over medium heat, add the thinly sliced smoked sausage. Cook until the sausage slices are browned and heated through. Once done, remove them from the skillet and set aside.

  3. Sauté Onions and Garlic: In the same skillet, add the finely diced onion and minced garlic. Sauté until the onions become translucent and the garlic is fragrant. This should take about 3-4 minutes.

  4. Combine Ingredients: In a large mixing bowl, combine the diced potatoes, cooked sausage, sautéed onions and garlic, shredded cheddar cheese, ranch dressing mix, milk, and melted butter. Season with salt and pepper to your liking. Mix until all ingredients are well incorporated.

  5. Transfer to Baking Dish: Lightly grease a baking dish to prevent sticking. Pour the potato and sausage mixture into the prepared dish, spreading it out evenly.

  6. Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 60 minutes. After 60 minutes, remove the foil and continue baking for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
