For the Chicken
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and black pepper (to taste)
- 2 tablespoons olive oil
For the Sauce
- 16 oz can chopped tomatoes
- 3 cloves garlic, minced
- 1/2 red onion, finely chopped
- 1 teaspoon oregano
- Salt and black pepper (to taste)
For the Topping
- 1 cup shredded mozzarella cheese
- 2–3 fresh basil leaves, chopped
Instructions
- 1. Prep the Chicken
- Preheat the oven to 375°F (190°C).
- Rinse and pat the chicken breasts dry with a paper towel.
- Using a sharp knife, make shallow criss-cross cuts into each chicken breast (don’t cut all the way through—just enough to help absorb flavor).
- Place the chicken in a baking dish and season both sides with garlic powder, onion powder, Italian seasoning, salt, and pepper. Drizzle olive oil evenly over the chicken.
- 2. Make the Sauce
- In a mixing bowl, combine chopped tomatoes, minced garlic, red onion, oregano, salt, and pepper. Stir well.
- Pour the tomato mixture over the chicken, making sure each piece is evenly coated.
- 3. Bake & Broil
- Sprinkle mozzarella cheese generously over the top of the chicken.
- Bake uncovered for 25-30 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C).
- For a golden, bubbly cheese topping, turn on the broiler for 2-3 minutes at the end of cooking.
- 4. Garnish & Serve
- Remove from the oven and sprinkle with fresh basil for added flavor and color.
- Serve hot with pasta, garlic bread, or a fresh salad. Enjoy!
