For the Chicken:
- 4 skinless/boneless chicken breasts
- Salt and pepper to taste
- 3 tablespoons vegetable oil
Marinade (Shortcut: Use Italian Salad Dressing):
- 1/3 cup olive oil
- 1/3 cup ranch dressing
- 2 tablespoons Worcestershire sauce
- 1 teaspoon distilled white vinegar
- 1 teaspoon lemon juice
- 1 tablespoon minced garlic
- 1/2 teaspoon pepper
Parmesan Crust:
- 1/2 cup Parmesan cheese, chopped into bits
- 1/2 cup Provolone cheese, chopped into bits
- 6 tablespoons Buttermilk Ranch salad dressing (or regular Ranch)
- 4 tablespoons melted butter
- 3/4 cup panko breadcrumbs
- 2 teaspoons garlic powder
Instructions
Prepare the Chicken:
- Make the Marinade: Whisk all marinade ingredients together until well-combined.
- Pound the Chicken: Place chicken in a freezer bag, remove air, and seal. Pound chicken to about 1/2 inch thick.
- Marinate: Sprinkle chicken lightly with salt and pepper. Place in a new freezer bag with marinade, seal, and refrigerate for at least 30 minutes or overnight.
- Sear the Chicken: Heat vegetable oil in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side without moving to achieve a golden brown color. Reduce heat to medium if the pan gets too hot. Once cooked, transfer to a clean skillet or baking sheet and tent with foil.
Add the Parmesan Crust:
- Preheat Broiler: Preheat oven to a low broil (450°F).
- Prepare the Cheese Mixture: Combine Parmesan, Provolone, and Ranch dressing. Microwave in 15-second intervals, stirring between, until melted. Spread over the chicken.
- Prepare the Breadcrumb Topping: Mix melted butter, garlic powder, and panko breadcrumbs. Spoon on top of the cheese.
- Broil: Broil chicken for 3–4 minutes until the topping is golden brown. Watch closely to avoid burning.
Serve:
Serve hot with mashed potatoes or your favorite sides. Enjoy!
Notes
- Nutritional facts account for discarding half the marinade after use.
- For a lighter version, bake or grill the chicken instead of pan-searing.
- Keep an eye on the broiler to prevent the topping from burning.
