Description

This Easy Sautéed Mushrooms with Spinach dish is a simple, healthy, and flavorful side that comes together in just 15 minutes. Earthy mushrooms are sautéed to golden perfection with garlic and wilted spinach, then brightened with a squeeze of lemon and finished with fresh parsley. It’s a versatile side dish perfect for pairing with meats, grains, or pasta!

Ingredients

Units Scale
  • 1 lb fresh mushrooms (cremini or button), sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice (optional, for brightness)
  • 1/4 teaspoon red pepper flakes (optional, for a slight kick)

Instructions

  1. Sauté the Mushrooms
Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until they are golden brown and tender.

  2. Add Garlic and Spinach
Stir in the minced garlic and cook for 1–2 minutes until fragrant. Add the fresh spinach and cook for another 2–3 minutes, stirring occasionally, until the spinach wilts down.

  3. Season
Season with salt and pepper to taste. If using, sprinkle in red pepper flakes for a bit of heat and drizzle lemon juice over the top for added brightness.

  4. Serve
Remove from heat and transfer to a serving dish. Garnish with chopped fresh parsley and serve immediately as a side dish or as a topping for meats, grains, or pasta.
