Description

This Greek Yogurt Bark is a creamy, protein-packed frozen treat with a delicious peanut butter and chocolate topping. Sweetened naturally with honey or maple syrup, it’s the perfect healthy snack or dessert!


Ingredients

  • 1 cup plain full-fat Greek yogurt
  • 3/4 cup peanut butter
  • 1/4 cup vanilla protein powder
  • 12 tablespoons maple syrup or honey
  • 1/4 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • Flaked sea salt (optional)

Instructions

  1. Mix the Base:
    1. In a mixing bowl, stir together Greek yogurt, peanut butter, protein powder, maple syrup (or honey), and vanilla extract until smooth and creamy.
  2. Spread on a Pan:
    1. Line a quarter sheet pan (or a 9×13-inch baking pan) with parchment paper.
    2. Using an offset spatula, spread the yogurt mixture evenly to about ¼ to ½ inch thick.
  3. Melt the Chocolate:
    1. Microwave dark chocolate chips in 30-second intervals, stirring between each until fully melted.
    2. Spread the melted chocolate over the yogurt mixture in an even layer.
  4. Freeze:
    1. Place the pan in the freezer for at least 2–3 hours or until fully solid.
  5. Break and Serve:
    1. Once frozen, sprinkle with flaked sea salt (if using).
    2. Cut into pieces with a sharp knife or break it into chunks by hand.

Notes

  • Use Full-Fat Greek Yogurt to prevent iciness. Lower-fat versions contain more water, which can create an icy texture when frozen.
  • Let It Soften Slightly before eating for a creamier texture. About 2–3 minutes at room temperature is ideal.
  • Storage: Keep yogurt bark stored in the freezer. Only take out what you plan to eat, as it will become runny if left at room temperature too long.
