Description
This No-Oven Turkish Bread (Bazlama) is a soft, fluffy flatbread made with just flour, milk, and yeast! It’s lightly pan-cooked until golden brown, forming beautiful air pockets that make it light and chewy inside. Perfect for serving with butter, olive oil, dips, or stuffed with your favorite fillings. No oven required!

Dough (Makes 6 Pieces, 18 cm Each)
- 500 g bread flour or all-purpose flour (4 cups)
- 160 ml warm milk (2/3 cup)
- 160 ml warm water (2/3 cup)
- 10 g instant dry yeast (1 1/2 tbsp)
- 10 g sugar (1 tbsp)
- 8 g salt (0.8 tbsp)
Topping (Optional)
- 20 g melted unsalted butter (or olive oil)
- Chopped parsley (for garnish)
Instructions
- 1. Prepare the Dough
- In a mixing bowl, combine warm milk, warm water, sugar, and yeast. Stir well and let sit for 5 minutes until foamy.
- Add flour and salt to the yeast mixture and mix until a dough forms.
- Knead the dough by hand or with a mixer for 10 minutes until it’s smooth and no longer sticky.
- 2. Let the Dough Rise
- Cover the dough with a clean cloth and let it rest in a warm place for 1 hour, or until it has doubled in size.
- 3. Shape the Bazlama
- Divide the dough into 6 equal pieces and shape them into round balls. Cover with plastic wrap to prevent drying.
- Roll out each piece into a flat round shape (about 18 cm in diameter and 5 mm thick).
- 4. Cook the Bread
- Heat a thick-bottomed pan or skillet over medium heat.
- Place a rolled dough piece onto the pan. Cook until bubbles form on the surface (about 2 minutes), then flip.
- When the bread puffs up like a balloon, lower the heat and continue cooking until both sides are golden brown.
- Repeat for the remaining dough pieces.
- 5. Serve & Enjoy
- Brush the warm bread with melted butter or olive oil and sprinkle with chopped parsley if desired.
- Serve immediately while warm and soft!
Notes
- Use a thick pan for best results. A thin pan won’t allow the bread to puff up properly.
- Cover the cooked bread with a towel to keep it soft while you cook the remaining pieces.
- Serving Ideas: Serve with hummus, tzatziki, garlic butter, or use it as a wrap for kebabs!
- Storage: Store in an airtight container at room temperature for 2 days, or freeze for up to 3 months.
