For the Salmon

  • 4 skinless salmon fillets
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 teaspoon unsalted butter

For the Lemon Orzo

  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup dry orzo pasta
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups low-sodium chicken broth
  • 5 ounces baby spinach
  • Juice from 1/2 lemon
  • 1/2 cup grated Parmesan

  • Freshly ground black pepper
  • Chili flakes (optional)

Instructions

  1. 1. Prepare the Ingredients
  2. Grate the Parmesan cheese, finely chop the onion, and mince the garlic.
  3. Pat the salmon fillets dry with a paper towel. Season both sides with garlic powder, paprika, salt, and pepper.
  4. 2. Sear the Salmon
  5. Heat olive oil and butter in a large nonstick skillet over medium-high heat.
  6. Add the salmon fillets and sear for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.
  7. 3. Cook the Orzo
  8. Reduce the heat to medium and add the onion and garlic to the same skillet. Cook for about 2 minutes until softened and fragrant.
  9. Stir in thyme, salt, and pepper, then add the orzo and toast for 1 minute.
  10. Pour in the chicken broth and bring to a gentle boil. Reduce heat to medium-low and simmer uncovered for about 8 minutes, stirring occasionally until the orzo is nearly al dente and most of the liquid is absorbed.

  12. Stir in spinach and cook for 2 minutes until wilted.
  13. Add lemon juice and Parmesan, stirring until creamy. If needed, add extra broth to adjust consistency.
