Description

This Sour Cream Beef Noodle Casserole is a hearty, comforting dish layered with creamy pasta, flavorful ground beef, and plenty of melted cheese. Perfect for a family dinner, it’s easy to make and packed with delicious flavors!

  • 12 oz. uncooked egg noodles
  • 1 lb. ground beef
  • 1 yellow onion, finely chopped
  • 2 medium garlic cloves, minced
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) diced tomatoes, drained
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • Red pepper flakes, to taste
  • Salt and pepper, to taste
  • 8 oz. sour cream
  • 8 oz. small curd cottage cheese
  • 1/2 cup Parmesan cheese, shredded
  • 2 cups cheddar cheese, shredded
  • Fresh parsley, for garnish

Instructions

  1. Cook the Noodles: Bring a pot of salted water to a boil. Cook the egg noodles according to package instructions until al dente. Rinse with cold water to stop cooking and toss with a splash of olive oil to prevent sticking.
  2. Prepare the Beef Sauce: Brown the ground beef in a skillet, breaking it up into small pieces. Drain any excess fat. Add the onion and garlic to the skillet and sauté until fragrant (about 3 minutes). Stir in tomato sauce, diced tomatoes, Worcestershire sauce, smoked paprika, red pepper flakes, salt, and pepper. Simmer for about 5 minutes, or until the sauce thickens.
  3. Mix the Pasta: In a large bowl, combine sour cream, cottage cheese, Parmesan cheese, and cooked noodles. Mix until well combined.
  4. Layer the Casserole: In a 9×13-inch casserole dish, layer half the pasta mixture, followed by half the beef mixture, and half the cheddar cheese. Repeat the layers, finishing with a layer of cheddar cheese on top.
  5. Bake: Bake uncovered in a preheated 350°F oven for 25–30 minutes, or until the cheese is melted and bubbly.
  6. Serve: Garnish with fresh parsley and serve hot.
